Use it straight out the jar: It is often served as part of an appetizer, such as on a bruschetta, perhaps dressed with olive oil and lemon juice. The Sardinian dish of spaghetti con bottarga is also a great introduction to one of Italy's best kept secrets: hot spaghetti dressed with olive oil and sprinkled with grated or sliced roe.
