Venezie IGT Italian Pinot Grigio Wine is pale straw in hue and has delicate floral aromas with a hint of citrus. On the palate, the wine offers tropical fruit flavours and a crisp, refreshing finish. The three regions of Trentino-Alto Adige, Friuli-Venezia Giulia and Veneto encompass the delle Venezie IGT in northeastern Italy. This high altitude region is ideally suited to producing some of the best Italian Pinot Grigio grapes, crisp and elegant. The grapes for this wine were gently crushed and pressed, and the juice was allowed to cold settle prior to fermentation in upright stainless steel tanks at a temperature of 15°C.

A perfect blend of two delicious white grapes - Grillo and Viognier - Rina Ianca is a true expression of Sicily. Rina Ianca means "white sand" in Sicilian dialect, reminiscent both of Sicily\'s stunning coastline and the light, sandy soil found in the vineyard where we grow our white grapes at Santa Tresa. Rina Ianca was their first foray into white winemaking on the estate; they grow the traditional Grillo and the French grape variety, Viognier, a grape rarely grown in Sicily. They find the two grape varieties complement each other perfectly, resulting in a fragrant, well-balanced wine. The Viognier lifts the Grillo a little, also adding some backbone and complexity. The harmony between the two grapes is reflected in the beautiful balance of this unique wine. At Santa Tresa they respect and encourage nature which in return allows them to prod a great wine that really is more than just organic, it\'s also unique!
The blending of these two grapes creates an enjoyable, everyday drinking wine that offers intense aromas of both citrus and tropical fruit flavours.
Catarratto is an Italian white wine grape planted primarily in Sicily, covering around a third of the island\'s vineyards. Overproduction in the 90s has led to vast quantities of this grape being distilled, or used in blends for bulk, table wines. Catarratto was historically favoured for providing quantity for Marsala wine production. Since early 2000, the wine renaissance in southern Italy, based on superior vineyard management and cellar practices, is now beginning to show promising results for this grape, though quality Catarratto wines still account for a slim minority of the total production. With greater understanding, though, the potential exists to make some fine wines here in the future. Catarratto can make full bodied wines with lemon notes and intense floral notes.

Sometimes you just can’t get enough of it… The grape withstands high temperatures and is widely used in Sicilian wine-making (in particular for making the best Marsala). The berries are medium large, spherical and yellow gold. In suitable soils the crop usually is plentiful. The variety is characterized by a higher sugar content compared to other white grapes, resulting in quite high alcohol, in addition to particular organoleptic properties. Although most people would prefer it young and fresh, Grillo also has aging capability.

The taste is delicate, pleasant and fresh, with a marked mineral note.
Fruity and delightful on the palette, Lamelle is our youngest child, unique and exuberant and the only white amongst our wines. The climate and terroir at Il Borro would normally make producing white wine a challenge, but we always try to exceed expectations. The “Lamelle” is made from hand-picked Chardonnay grapes. The vendage is followed by a soft and delicate pressing and separation of the skins and the must. Alcoholic fermentation takes place at a controlled temperature of 16°C, 50% in new French casks and the remaining 50% in stainless-steel vats, and lasts for 8-10 days. The wine is subsequently blended and left to mature for a further two months in barrels. At the end of this period, the “Lamelle” wine is filtered and left for another two months in the bottle before being sold.

The name Cervaro comes from the noble family that owned Castello della Sala during the 14th century, Monaldeschi della Cervara. A blend of Chardonnay grapes and a small quantity of Grechetto make a wine that can age over time and represent the elegance and complexity of this unique estate. Cervaro della Sala is one of the first Italian wines to have malolactic fermentation and aging take place in barriques. The first vintage of Cervaro to be produced was the 1985 vintage.

The vines are situated at around 400m above sea level, on terraces that slope down to the Savuto river, surrounded by unpolluted woods. The “virgin” ecosystem and the wind that blows from the nearby Tyrrhenean Sea, safeguard the health of the vines and so minimise the use of agropharmaceuticals. Thermals from the nearby river intensify the aromas of the native cultivars. A south west exposure to evening sun slows down the ripening of the grapes. This softens the harshness that can sometimes be found in wines from the south. At the beginning of September, the grapes are picked by hand, destemmed and pressed in a single process. Then follows a static decanting at low temperature prior to removing the first dregs. Finally, a slow vinification at controlled temperature.
